In My Lunchbox: Episode Four

I've been a little disorganised lately and a bit tired, so lunch has been made on a whim.  For the past couple of days before work, I've just whipped up a simple fruit salad made with in season fruit.  The tangelo comes from my mother's tree.  She is always trying to push either grapefruit or tangelos on me when I visit...haha!

The salad is size large of course (my style) and served with a side of plain yogurt sweetened with a little Splenda.  I usually dip the fruit into the yogurt as I eat it.

Ingredients

Banana
Apple
Tangelo
Frozen Raspberries
Strawberries

This is what I've been having for lunch for the past week.  Something like a Thai Beef Salad.

Roast Beef
Salad Mix
Cucumber finely sliced
Tomato finely sliced
Red Onion, finely sliced
Sweet Chili Sauce
Salt n Pepper

In My Lunchbox

Steamed Kale, Radish, Tomato, Grated Carrot, Yellow Pepper, Avocado, Sea Salt, Pepper and a side of chicken breast (not shown).

Yum, I love big salads.  I find that if I use a variety of vegetables and a couple of juicy ones (like grated carrot and tomato) I don't need any other dressing apart from salt and pepper.  The vegetables just taste so good.

What was in your lunchbox today?

Today I got my hair cut.  I woke up this morning looking like Medusa, then I couldn't be bothered straightening out my hair.  I went to work with it tied up in a pony tail, but looking boofy.  By the afternoon I was fed up with it and went to the hairdresser on my break and got it cut.  She didn't do as good a job as my last hairdresser but it was better than when I went in for sure.  I am happy with it for now, but I think I will go back to Laurie next time.  He made my hair look fantastic!

I don't have a workout to post today.  I got up a little too early then went back to bed and when the time came for me to actually go to the gym, I was all dozy and couldn't get up.  I will have to do both my workouts tomorrow - focusing on clean & press and deadlift.

Green Bean & Artichoke Salad

.....inspired by 4 Ingredients, Fast Fresh & Healthy

1 can of artichokes, drained
250g fresh green beans
2-3 tablespoons olive oil
1 teaspoon chili flakes
dash of balsamic vinegar
1/3 cup pistachio nuts, chopped
handful of parsley, chopped
salt and pepper to taste

Place artichokes in a bowl and add olive oil, vinegar and chili flakes.  Set aside to marinate, at least 1 hour.  Chop beans into 2" pieces and place in boiling water about 3-4 minutes.  Drain and place in bowl with artichokes.  Add the rest of the ingredients and toss to coat.  Season with salt and pepper and serve immediately.

Chicken with Corn & Feta Salsa

Here's that recipe that I mentioned the other day


I discovered something new today thanks to Angela at Oh She Glows: Coconut butter. It's as easy as putting shredded coconut in your food processor and blending for 10 minutes. I'd never even really heard about coconut butter before let alone think about making it myself. Such a good idea and it would be fantastic as a topping for various goodies.

I made some myself tonight, but I may have to make a little more tomorrow so I can fill up my jar.

Herb and Garlic Salmon Salad

I got this recipe from Christine's blog.  I made it tonight for dinner.... so good.  Luckily the herbs she suggested I already have growing in my garden (yay!).  I made enough for two big serves.



500g grilled salmon, flaked
Half a packed of baby spinach (about 60g)
Half a large head of broccoli, cut into small florets
3 smallish carrots, cut into sticks
1 large tomato, chopped
2 cloves garlic, minced (or dried garlic)
Fresh Dill
Fresh Thyme
Olive Oil

Steam the broccoli and carrots.  Mix the dill, thyme, garlic and olive oil.  Put all the ingredients in a large bowl and mix through the herb garlic oil mixture.  Serve immediately.

Thanks again Christine.... I have another go-to recipe.  I don't have one for salmon actually because I don't normally eat it, but it was on special this week at the grocery store!
